Pale Ale Buckwheat
3 SRM
33 ppg
Miller Malting raised the kiln temperature to enhance a toastier profile while toning down some of the inherent earthy notes linked to buckwheat.
Flavor Profile: soft, creamy, slightly nutty flavor leaning towards toasty peanut!
Buckwheat offers a unique contribution to beers where residual sweetness and body are important. Due to higher gelatinization temperatures compared to barley, Buckwheat functions as a foam stability contributor, similarly to a dextrin malt. Use less than 10% of grist for best results. sold in 1 lb increments.
Due to the low enzymatic content of gluten free malts a rising step mash with exogenous enzymes is recommended as detailed in the book Gluten-Free Brewing: Techniques, Processes, and Ingredients for Crafting Flavorful Beer by Robert Keifer from Brewers Publications.
