The perfect pale buckwheat! This amazing malt has a fresh floral taste, without the usual nutty or earthy flavors you’d expect from buckwheat.

Buckwheat offers a unique contribution to beers where residual sweetness and body are important. Due to higher gelatinization temperatures compared to barley, Buckwheat functions as a foam stability contributor, similarly to a dextrin malt. Use less than 10% of grist for best results.

Due to the low enzymatic content of gluten free malts a rising step mash with exogenous enzymes is recommended as detailed in the book Gluten-Free Brewing: Techniques, Processes, and Ingredients for Crafting Flavorful Beer by Robert Keifer from Brewers Publications.
